Kanonkop's Cabernet Sauvignon has a complex nose, with aromas of black berries, cassis, tobacco with cedar spice and oak.
On the palate Cabernet Sauvignon is soft and full, with concentrated black fruit supported by oak spice, toasted nuts and a hint of fresh fynbos. Tannins are firm but well integrated.
Expected evolution: Kanonkop's Cabernet Sauvignon expresses its best within 15 years of bottling.
Food Pairings: South African red wine to go with all types of steaks, slow-cooked venison, braised beef ribs and aged hard cheeses.

In the vineyard
The cool climate and regular rainfall reduced the water stress of the vines during ripening. This year's harvest was characterized by regular rainfall.

In the cellar
Fermentation took place in open-air concrete tanks at 29°C. During fermentation, punching down was done every 2 hours. The must was separated from the skins after 5 days. After malolactic fermentation, the wine was aged for 24 months in 225 L Nevers French oak barrels, 50% new and 50% second use.
