Chardonnay from South Africa with a golden yellow color with green highlights. Well balanced, soft in texture, it has great aromas and flavors. On the nose, a complex mélange of lemon zest, orange, yellow stone fruit and hints of spice. On the palate, a complex mélange of citrus and tropical fruit.

Table suggestions: Perfect with fish and shellfish, as well as white meat.

Serving size: 13.5%.

In the vineyard

The wine comes from the vineyards of three areas belonging to the estate: Stellenbosch, Elgin Valley and Boschendal farm. The variety of the vineyards gives complexity and character to this Chardonnay. After careful pruning of the vines and the elimination, during the month of November, of the excess shoots to leave only the most luxuriant ones, the grapes were harvested by hand.
The 2021 vintage shows a rich concentration of flavours, excellent weight on the palate and a rounded texture.

In the cellar

All Chardonnay grapes are pressed into whole bunches and the must is left to rest for two days. Fermentation in stainless steel tanks follows, with the addition of selected yeasts. A part of the wine (70%) ages in French oak barrels for a further 10 months: 12% in new barrels and the remaining percentage in 2nd and 3rd use barrels. During this period, the barrels are subjected to bâtonnage on a monthly basis to enhance the peculiarities of the wine. The remaining 30% of Chardonnay ages in steel tanks.
