Chardonnay 2020 Barrel Fermented - Jordan

The Jordan Wine Estate vineyards are located on the hills around Stellenbosch, about 300m above sea level. This area enjoys very favorable climatic conditions, as it is reached by the Atlantic breezes from False Bay, which cool the temperature by about 3 ° compared to the flat area. The cooler area, facing south and east, is home to the most sensitive and aromatic white grape varieties. The particular microclimate gives the Chardonnay an extraordinary uniqueness. This South African Chardonnay comes from vines aged 21 to 35 years.

Fermentation takes place in Nevers and Bourgogne French oak barrels (39% new, 43% second use, 18% and 13% third and fourth use respectively). The wine is aged on the lees in cask for 9 months, with frequent bâtonnage. 8% of Chardonnay is fermented in the tank and then added to the barrel aged wine to ensure the perfect balance of aromas. Both the Chardonnay aged in vats and the one aged in cask go through malolactic fermentation.
