Doing justice to its reputation as an aromatic grape, the inviting aroma of this Viognier is a fitting prelude to the myriad flavors that will follow on the palate. Pear, lychee, peach and melon are interspersed with savory umami notes and a hint of spice. Although vibrant and satisfying to enjoy in its youth, this complex wine has the potential to develop honeyed richness and more tertiary flavors up to 5 years in bottle.

In the vineyard

Good winter rainfall meant the 2020 harvest could begin at the ideal time, and the crop was sizable compared to previous years. Very warm temperatures were recorded at mid-season, resulting in bold, rich and structured wines. The quality produced was excellent, with excellent acidity distinguishing the earlier-ripening white varieties.
The Elgin vineyard of this Viognier is unique for its cool climate and sandy schist soils, which create the basis for a very aromatic and concentrated wine. Careful thinning of the shoots and control of the harvest were carried out throughout the season to ensure the harvest of concentrated fruit of the highest quality.

In the cellar

The grapes for this South African Viognier are hand-picked in the cool hours of the early morning.
Upon arrival at the winery, the grapes are sorted and then pressed. After a light decantation, half of the must ferments naturally in 2nd or 3rd use barrels. This component is left to mature for 9 months, producing a bold, particularly vibrant and rich wine. The second half of the juice is fermented in steel tanks to maintain the freshness and varietal vivacity, characterized by its aromas of pear and delicate spice. These two different winemaking methods produce wines that are very different in style, but complement each other beautifully when blended.
