On the nose, Vin de Constance presents notes of citrus , honey and stone fruit which also accompany the palate. With a structured body , it is rich and creamy on the palate with a refreshing acidity.
It finishes with a fresh citrus zest and leaves no cloying sweetness.
Table pairings: perfect as a dessert wine , it pairs best with sweet creams and fruit-based desserts.

A shorter harvest due to drought led to faster ripening of the fruit, which produced berries with concentrated flavors and well-balanced acidity.
Thanks to the renovation of the cellar, the perfect maceration and fermentation of the Moscato took place in dedicated tanks. Throughout the season the harvest was divided into batches, from the riper berries which have great acidity to the raisins due to their sugar concentration. Each batch is kept separate and treated differently. The grapes chosen for Vin de Constance demonstrate the perfect relationship between sugar, alcohol and acidity, which allows the wine to stop fermentation naturally and without intervention.

The wine matures in 50% new French oak, Hungarian oak and French acacia barrels. After 3 years in barrel on the yeasts, racking takes place. This is followed by another 6 months in tanks before bottling.
