Pinotage is a vine originating from South Africa, born in 1925 from a singular cross between Pinot Noir and Hermitage (or Cinsaut). The father of Pinotage was Abraham Izak Perold, a university professor and winemaker who sought the best resistance to the dry summers of the Western Cape region in South Africa.
Ruby red wine with violet reflections.
On the nose this South African Pinotage is wonderfully aromatic, with aromas of Red currant, macerated sour cherries e cinnamon spices. On the palate it shows a silky tannin structure, supported by a subtle acidity. The nuances of vanilla integrate with the red fruit, wild berries, plums e more. An elegant and complex Pinotage, with persistent flavors of juicy and ripe plums on the finish.
Expected evolution: this Pinotage will give its best up to 15 years after bottling.
Pairings at the table: Perfect with duck, game, Lamb and dishes of the Asian cuisine.

The effects of the drought of the previous 3 years were still felt in 2019, despite more abundant rainfall: in 2019 the grapes were smaller in size, the harvest was smaller but of great quality.
Vineyards are 32 to 66 years old and grown in dry, clay-rich soils, locally referred to as “Hutton.” Reduced artificial rrigation. Production was 5 tons/ha.

After the harvest, the grapes are de-stemmed and the must ferments in open concrete tanks at a temperature of about 28 ° C and macerates on the skins for 3 days. After malolactic fermentation, the wine ages for 16 months in Nevers French oak barriques (80% new and 20% second-use). The Pinotage is finally bottled and follows a further refinement of a few months before being marketed.
