A mélange of green and yellow tropical fruits with hints of lime and green fig. A smooth, full-bodied and harmonious wine on the palate, with a pleasant mineral and savory lingering finish. Good balance between acidity and structure.

Food pairings: Ideal with vegetarian dishes, salads, pasta with fresh vegetable sauces, fish and fresh cheeses. Excellent as an aperitif.

In the vineyard

The grapes of this Sauvignon Blanc come from vineyards located in the coastal area, very close to the ocean, at an altitude between 150 and 400 m. They are therefore exposed to the fresh sea breezes that give the grapes an intense flavor and good natural acidity. The soil on which the vineyards are located, granite and with high water retention properties, helps to produce wines with a pleasant structure and intensity. Meticulous pruning of the vines is carried out at the Boschendal wine estate: in particular, most of the leaves on the side of the canopy exposed to the cooler side are removed immediately after flowering. At the time of harvest the regrowth is sufficient to protect the bunches from direct sunlight. The grapes are tasted regularly in the vineyard to ensure that they are harvested at the optimum degree of ripeness, to guarantee the typical crunchy fruit scent of the wine.

In the cellar

The winemaking process takes place in an anaerobic environment, reducing exposure to oxygen to protect the delicate varietal flavors. Fermentation takes place in steel at 16 °; the wine is left on the skins, with regular weekly stirring for the first month. Finally, a small percentage of Semillon is added to balance the acidity.
